My original petcock is beyond repair. The new replacement petcock lacks a cold start/choke lever.
Will this be a problem and if it will, can anyone recommend a solution for starting without the choke?

Are you referring to the prime position that allows fuel to flow before the engine creates vacuum to get you started after long periods of inactivity? If so you should now have an off position that you should use each time the bike is shut off. Also a reserve and normal run position. You'll will also have to plug the vacuum line that connected to your old petcock. Everything should work fine then.
